What NOVA classification actually means
NOVA isn't a moral scale. It's a way to describe how much industrial processing a food has been through — which turns out to be one of the most useful frames we have for reading a modern supermarket.
NOVA is a food classification system developed by researchers at the University of São Paulo and used in public-health work by the FAO and Pan American Health Organization. It groups foods into four categories based on the extent and purpose of processing — not their nutrient profile.
Group 1 — Unprocessed and minimally processed.
Whole foods and foods altered only by drying, refrigeration, freezing, pasteurisation, grinding, or roasting. Think: an apple, plain oats, milk, a chicken breast, dry pasta.
Group 2 — Processed culinary ingredients.
Substances extracted from Group 1 foods used to season and cook: salt, oil, butter, sugar, vinegar, honey. On their own they're not "meals" — they're what you cook with.
Group 3 — Processed foods.
Group 1 foods with Group 2 ingredients added, typically to preserve or enhance them. Canned beans, freshly-baked bread, cheese, salted nuts, tinned fish. Recognisable as a version of the original ingredient.
Group 4 — Ultra-processed foods.
Industrial formulations made mostly from substances derived from foods (protein isolates, hydrogenated oils, high-fructose corn syrup) plus additives (emulsifiers, colourings, flavourings) that don't have a home kitchen equivalent. Soft drinks, packaged snacks, instant meals, most commercial breakfast cereals.
Why the group matters.
A growing body of observational research links high consumption of Group 4 foods with poorer cardiometabolic outcomes, independent of calorie and macronutrient content.
